samples, If I come in for a pie chances are I am getting something I am familiar with such as cherry or apple but if you would give me a sample of say peach cobbler to taste I may take one of those too. Also expand your current menu to reflect your customers. Chances are you probably have many customer ordering one type of pie. Well take that pie and experiment and make different variations of that pie. I.E. mix fruit or different crust texture and taste. Do you guys sell cakes? If so look into Tres Leche cakes. They are very good and people around here go nuts for it…….

fundraisers. if i buy something from someone, and its really good, i usually try it out again before next years fundraiser. like the pie shoppe or the moi’s (in my area).

also, free samples are good. =]

Good variety of freshly made pies at a reasonable price, helpful staff, good display, packaging that will enable me to eat the pie on the move if I want. Also, with every pie sold a small menu of other pies available along with the address and your website address.

I would love the option to purchase te pie freshly frozen- knowing it has not been in a giant freezeer for six months filled with preservatives…. So what I am saying,
I like the added option of Take and Bake style.
I would like also to be able to purchase ready to bake crusts for my home baking.
I would like to have also a choice of meat pies such as
chicken pot or shepherds pie or taco pie.
Appropriate holiday pies.
Meranges baked on the spot as ordereing a lemon pie etc- this would be cool as freshly baked merangues are delicious.
I would like an assortment of good fruit pies.
A freezer that alots quarts of vanilla ice cream available
for your take out orders. (and a few other
flavors for the devoted ice cream lover)
A trendy environment yet classy- brightly painted walls with a
pie crust trim around the ceiling…
A weekly specialty pie…
A signature pie, such as my own million dollar, “He married me for my chocolate pie recipe!”

As others proposed, a sampler program may be a good idea.

You don’t want people coming in and just eating a chunk of pie and leaving. So offer incentives for people to try other pies.

For example, if someone came in and ordered a full lemon meringue pie, you can offer them a sampler sized slice from another variety to try. If they like that, they may come back and buy a different pie next time. At least they will know whether they like it or not and won’t waste $10 or more buying a whole pie.

If you do not sell by the slice, you should consider doing so. Sometimes a full pie is too much for two or three people to take home. If a regular pie sells for $8 and can be cut into eight slices, you can sell the slices for $1.50 or $2.00 and double your profits.

Some people watch their weight too (although what they are doing in a pie shop is a good question), so perhaps have a small variety of low-fat pies, or ones made with aspartame instead of sugar.

If you have a small patio, you can consider putting a table and chairs out there, and serve the pies at your business along with coffee or tea.

I would regularly patronize a pie shop that uses organic products and “healthy” pies.
Of course, your whole line doesn’t have to be like that, but if you just offered a few flavors that had local, organic ingredients, pies that were low-fat, pies that contain fruit that is good for you (like pomegranates, blueberries, etc.). Even if you had a vegan pie, that would be excellent.
Of course, you know your demographic as far as clientele…they might not go for that, but those are my $0.02.
Also, I would come back to your shop if you offered a small pie…it’s just me in my household and a whole pie would go to waste. If you had something smaller for one person, that would be excellent too.

what about every classical pie hot and cold apple cornish pastie terrines with water pastry dont forget pastry made from cooked potatoe also check the locals skinneys wont be eating pies unless you think low fat and low fat fillings good luck

For me personally pies with no onion in, I don’t like it, also onion gives me bad indigestion and if i feel one in my mouth it makes me wretch, i do love a nice peppery meat pie.
